Healthier Whole Wheat Chocolate Mint Chip Cookies

Ingredients
- 1/2 cup butter softened
- 1/3 cup sugar
- 1/3 cup brown sugar
- 2 eggs
- 1/2 tsp vanilla
- 1 tsp peppermint extract
- 1/2 tsp baking soda
- 1/3 cup cocoa powder
- 1 1/2 cups whole wheat flour
- 1 1/2 cups green mint chips
Instructions
- Preheat the oven to 350F2. Beat the butter, sugar, and brown sugar until creamy.3. Add eggs, vanilla, peppermint extract, cocoa powder, and baking soda and mix well.4. Stir in the flour & mint chips and combine until fully combined. 5. Using a cookie scoop, drop onto a cookie sheet.6. Bake for 7-10 minutes.7. Cool on the cookies and enjoy!
Trying new recipes is something I just love. My little family and I were getting prepped to traved to a weekend “reunion” of sorts with a few of my siblings and their families and we were assigned to supply treats for one of the meals. I happened upon this recipe on Pinterest (I heart Pinterest) and my family loves mint. They turned out to be way better than I had even thought. My brother-in-law said they were “The best thing we had eaten the whole reunion.” I have made them several times since then, and they are always a hit!
And don’t be thrown off by the whole wheat flour – the cocoa powder covers up any mild wheat flour if you’re worried about that. No one will even know you added the healthier option!
