Mom’s Bran Muffins
My mom would make these every morning before school and we would fill them with butter or sometimes even chocolate chips!
Equipment
- 2 Muffin Tins
- Cupcake scoop
- Mixer
Ingredients
- 1 1/2 cups wheat bran flakes All Bran
- 2 cups water
- 2 1/2 cups whole wheat flour
- 1 cup buttermilk
- 2 eggs
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups brown sugar
- 1/2 cup butter melted
Instructions
- Preheat the oven to 400F and spray 2 muffin pans with cooking spray.
- Pour the water over the bran flakes in the mixer and let it soak for 2 minutes.
- Add the flour and buttermilk and mix.
- Add the eggs one at a time, then the rest of the ingredients and mix until well incorporated.
- Using a cupcake scoop, fill each muffin tin (about 3/4 of the way full).
- Cook for 20 minutes, then allow to cool slightly.
- Fill them with butter, chocolate chips, or a person favorite – Nutella!
Even though I grew up in a very large family, I don’t remember eating cereal for breakfast. My wonderful mother would get up early and whip up these bran muffins. They were delicious. And because we each had quite a sweet tooth, we would usually fill them with chocolate chips. Pretty wicked, but quite delightful. This recipe is slightly modified from the one my mother used all those years, but still makes for one heck of a breakfast!
