Apple Butter Pancakes

When I worked at The Amish Cupboard, I told my boss that I wanted to create a recipe to help promote apple butter sales, since it’s fall.  This is what I came up with.

Cook Time 10 minutes
Course Breakfast
Servings 12 pancakes

Equipment

  • Griddle
  • Whisk
  • Spatula

Ingredients
  

  • 1 3/4 cup whole wheat flour
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp apple pie spice
  • 1/4 tsp salt
  • 1 egg
  • 1 cup buttermilk
  • 1/2 cup apple butter
  • 3 Tbsp cooking oil
  • toppings pecans, maple syrup, etc.

Instructions
 

  • In a large bowl, mix the dry ingredients together.
  • In a separate bowl, mix the wet ingredients together.
  • Whisk the wet ingredients into the dry ingredients until well incorporated.
  • Pour ¼ cup batter onto a hot, lightly greased skillet and cook 1 – 2 minutes on either side or until pancakes are golden brown.
  • Top with more of apple butter, pecan pieces, and pure maple syrup.  Pair with a glass of cold whole milk.

Shortly after I graduated from Southern Virginia University, I worked at The Amish Cupboard – a bulk food store that sold so many wonderful things – including apple butter.  I told my boss that I wanted to create a recipe to help promote apple butter sales, since it was fall.  The Amish Cupboard has closed its doors long since, but apple butter can still be found in a variety of grocery stores, as well as online.
