Apple Butter Pancakes
When I worked at The Amish Cupboard, I told my boss that I wanted to create a recipe to help promote apple butter sales, since it’s fall. This is what I came up with.
Equipment
- Griddle
- Whisk
- Spatula
Ingredients
- 1 3/4 cup whole wheat flour
- 2 Tbsp brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp apple pie spice
- 1/4 tsp salt
- 1 egg
- 1 cup buttermilk
- 1/2 cup apple butter
- 3 Tbsp cooking oil
- toppings pecans, maple syrup, etc.
Instructions
- In a large bowl, mix the dry ingredients together.
- In a separate bowl, mix the wet ingredients together.
- Whisk the wet ingredients into the dry ingredients until well incorporated.
- Pour ¼ cup batter onto a hot, lightly greased skillet and cook 1 – 2 minutes on either side or until pancakes are golden brown.
- Top with more of apple butter, pecan pieces, and pure maple syrup. Pair with a glass of cold whole milk.
Shortly after I graduated from Southern Virginia University, I worked at The Amish Cupboard – a bulk food store that sold so many wonderful things – including apple butter. I told my boss that I wanted to create a recipe to help promote apple butter sales, since it was fall. The Amish Cupboard has closed its doors long since, but apple butter can still be found in a variety of grocery stores, as well as online. Enjoy this delicious fall recipe!
